• Browned Butter Lemon Pasta – A 15 Minute Meal

    Yesterday I posted an Authentic Italian Meat Spaghetti Sauce so today I wanted to post a vegetarian Italian pasta dish. Trust me though you don’t need to be vegetarian to fully appreciate this pasta. I didn’t know exactly what kind of pasta I wanted to make, and then I realized I had some lemons I needed to use up while they were still fresh. Also, browned butter is a great way to add flavor to simple dishes so I decided why not combine the lemon with some browned butter. They seem as though they were made to go together. The great thing about this pasta is that it’s elegant, full of fresh flavor, incredibly simple and it can be made in 15 minutes. Have guests over and impress them with this delicious, flavorful pasta. No one needs to know how easy it was =). Enjoy!     After leafing through a few Italian cooking magazines that I picked up while in Italy last week, a simple crabmeat pasta lodged in my brain and was all I could think of while having to sit through a long day of conference calls. A quick trip to the market and I was ready to create my own version of this Sicilian-inspired pasta. This flavorful pasta is the perfect mid-week dinner – simple, fast and yummy. Add a green salad and a bottle of crisp white wine and dinner is ready! Enjoy! Pasta with Crabmeat, Tomato and Basil Ingredients: 4 tablespoons olive oil 1 medium onion, finely chopped 1 28-ounce can diced tomatoes 2 tablespoons fresh basil, chopped (plus extra for garnish) Salt to taste 1/2 teaspoon red pepper flakes 1 pound of fresh jumbo lump crab meat (I used claw meat) 1 pound spaghettini or other thin spaghetti Directions: In a large saute pan over medium heat, heat the olive oil.   • Penne Pasta Salad with Spinach and Tomatoes

    With a triple hit of spices from the rosemary, thyme and oregano, this pasta salad is sure to stand out at a summer potluck. Directions Cook pasta as directed on package. Drain well. Meanwhile, mix oil, vinegar, rosemary, thyme, garlic powder, oregano and sea salt in large bowl with wire whisk until well blended. Add pasta and spinach; toss to coat well.
